Zhangjiajie kudzu powder is a natural and nutritional product extracted from kudzu, or pueraria. It can be mixed with boiled water, and then adding some white sugar and fried rice will make it taste better. Known as one of the three treasures in Zhangjiajie, kudzu powder has such effects as alleviating a hangover, clearing heat, tonifying energy, maintaining beauty, and delaying senility.
Fried meat with kudzu powder is a special dish of Zhangjiajie. The kudzu powder should be first mixed with water, which will cool down and become jelly like, and then it can be cut into slices. When the cured pork is fried with the kudzu slices, the latter can absorb the grease of the pork. This dish is usually served in Tujia restaurants.
